This coffee from Sitio Nossa Senhora de Fatima is the perfect example of what can happen when a young producer, using modern fermentation techniques combine with decades of family tradition.

Thiago Henrique's family stand as pioneers of specialty coffee production within the Cabo Verde region, a legacy that traces its roots back to his grandfather's pioneering efforts in planting the initial coffee plots in 1965. This expertise has been transmitted through generations, with Thiago and his father, Adriano, becoming the present custodians of this rich knowledge.

Immersed in the nurturing influence of both grandfather and father, Thiago found himself captivated by their unwavering commitment and their legacy became the inspiration, compelling him to choose the path of Agronomy in higher education. His pursuit was not merely academic; he had a specific and deliberate aim to blend theoretical understanding with hands-on expertise, with the ultimate goal of elevating the the fermentation techniques involved in producing specialty coffees.

The harvested coffee is transported to the post-harvest station at his Father’s farm. This central processing unit boasts a comprehensive infrastructure, including washers, anaerobic fermentation tanks, suspended beds, pulping machines, patios, rotary dryers, and dedicated space for dry milling.

Thiago's devotion extends beyond the realm of agricultural practices; it seeks to forge a sustainable and symbiotic relationship between coffee cultivation and the environment, echoing the rich heritage of his family while charting a course towards a more responsible and accessible future for coffee producers.


POSTAGE 

Currently, we roast every Monday and carry out our quality control, analysis and packaging on Tuesday. We ship everything from Tuesday-Friday and orders placed after 12 noon on Friday will be fulfilled the following week. All our coffees are shipped as whole beans unless requested otherwise in the 'notes' section at checkout. We send everything via Royal Mail. Please get in touch with us if your coffee hasn’t arrived within 10 days of your order.

For our EU customers - in the wake of Brexit we have been experiencing some delays with deliveries while they - basically - figure all this shit out. Please bear with us.


REDUCE, REUSE, RECYCLE

Our cans are made from tin plate steel and therefore can be reused or recycled infinitely. We encourage you to reuse this can as much as you...can. Get it? 'Can' has more than one meaning. We offer a discount in-store when you refill your can. You can also refill at selected wholesale partners where available. No wholesale partner in your area? Let us know and we'll work on changing that. You can also now refill your can online - just select ‘refill’ from the drop-down menu. The cans can also be upcycled, or if you've accumulated too many they can be recycled infinitely.
